I finally made them!



For the past few months I have been dying to make cookie dough cupcakes. The idea was so intriguing and I thought how could that be bad? Cookie dough in a cupcake! Definitely a winner. So after months of wanting to make them, I finally did! It was my brothers birthday and I thought that that would be the perfect opportunity. There was a recipe from the Cake Mix Doctor for cookie dough cupcakes but I just made a plain yellow cake mix and put a frozen cookie dough chunk in the center. If you buy the tollhouse cookie dough already cut in cubes (the one that makes 24 cookies) I found that just one of those cubes was the perfect amount of cookie dough.

These cupcakes were super yummy and really fun for people to eat because there was a little surprise of cookie dough in the middle! For the frosting I did something I haven't done before. I wanted to make a SMBC but didn't have the right equipment for it. So...I invented a new frosting! I made a traditional chocolate buttercream with melted symphony bar and cocoa powder. Then I did the first step for SMBC which is to basically make the meringue and then I folded that into the buttercream. It made it so light and fluffy and not too sweet. People loved them and I can't wait to make them again!

    Agsin, you have out done yourself. I bet you go to sleep and wake up with all these new recipes that you have dreamed of. lol....

    Hey, guess what? I made the red velvet cake. And, it was very yummy. Everyone, of course was shocked and wanted me to take a lie detectors test.(I mean, I am usually the paper plate and cup person at get togethers)

    I used the Paula Deen recipe like you said... But, I did love that frosting from that throw down with BF and I used it.

    So, it was good. I have to admit it.

    But, it was so ugly. And, I am being nice. I now have to learn how to ice a cake.

    I also did not use any kind of nuts just in case but I was wondering if I did use them would I put them in the frosting or just kinda garnish the cake?


    hey, that cupcake holder thing you have at your business I bought one the other day. I know that is like putting the cart in front of the horse but it is motivating.

    I am making cupcakes with my niece today its her birthday. I am going to try one of those bag things with the tips so maybe the cupcakes will looke prettier than usual.

    Ok. I was just playing around tonight with this recipe and I have learned a huge lesson.

    When you are grocery shopping, you should really read what you are buying.

    For example... I got tollhouse cookies... Yep, I did... Unfortunately, they are oatmeal raisin... Dang it.. lol..

    My husband is laughing at me so hard.. Oh, well. I was only practising for this weekend.

    I am off to the icing... Pray for me.

    Don't worry about the oatmeal raisin-I think it will be good! ok..maybe just the oatmeal part, I'm not a huge raisin fan:) These cuppies are really yummy so I hope they turn out for you and I'm sure the frosting will be fabulous.

    I just got back from the store and bought some mini cupcake pans and will bake something with them tomorrow. I will get some posts up soon and let you know how they turn out.

    I looked up online how to make a chocolate butter cream and it had one cup of unsweetened cocoa in it.

    So, in the end, it was very dark. Did not taste so bad, but your meringue frosting just looks so yummy. Do you have that posted somewhere or is it in the book you referenced?

    I did take pics and I have to say that they don't look that bad. I bought one of those wilton frosting kits and, Wow, how much easier that is, lol....

    BTW, my husband asked me to stop talking to you because he has gained 10 pounds this month!!!! lol...... Oh well...

    Gosh, I had no idea how difficult it would be for someone as disorganized as me to not only attempt to cook something but to bake something. lol

    So far, everytime I have baked something, I have either misread an ingredient or completely forgot an ingredient. UGH....

    But, your cookie in the middle of the cupcake is a great idea. I made those and some mini cupcakes last Saturday night and got a lot of compliments.

    I found a simple cocoa buttercream recipe online but it ended up so uhm how do you say dark chocolately. lol

    I used the hersheys cocoa and it called for one cup of that and almost a whole bag of powdered sugar and then butter.

    How can I make it so its not so dark but more milk chocolate.
